alkali spreading value

The degree of spreading of six grains of milled rice in 10 ml 1.7% KOH for 23 h at room temperature or 30oC using a seven-point score (7=completely spread, and 1=no reaction). Gelatinization temperature of starch is estimated based on spreading value: low (6-7); intermediate (4-5); intermediate-high (3); and high (1-2).
