Calcagno
Calcagno is an Italian hand-made cheese prepared with ewe's milk on small, local farms on the island of Sardinia. They are then matured in natural caves at Castelcivita for 1-2 years by the Madaio family. Calcagno is a classic Pecorino with the sweetness and aromatics influenced by the Mediterranean climate. The herbaceous flavour of the soft yellow pate is reflective of the wild herbs and grasses passed onto the cheese. The aging time gives the paste a compact, firm, flaky and smooth texture and distinctively marked rind.
